Spinach Banana Muffins (Monster Muffins)

These muffins are a great way to sneak in some greens for the kiddos and perfect for halloween time. My kids love them so much that I now have to hide them. Mom win!


Recipe: (Approx. 16 muffins)


5 ounce - Baby spinach, fresh

2 - Bananas

1-1/4 cup - AP or whole wheat flour

3/4 cup - almond flour

1/4 cup - flax meal

2 tsp - baking powder

1/2 tsp baking soda

1 1/2 tsp - cinnamon powder

1/2 cup - raw sugar

2 tsp - pure vanilla extract

1/4 cup - coconut, canola, or coconut (any of these will work)

3/4 cup - almond milk (or any other milk/substitutes)


Directions:

1.) Preheat oven to 350 degrees.

2.) Place muffin liners in muffin pans.

3.) Mix all dry ingredients.

4.) Blend spinach, almond milk, and oil on high until fully pureed. Then, add banana and vanillas extract and blend on low.

5.) Pour the wet ingredients into the dry ingredients and mix well.

6.) Fill muffin cups about 2/3 full and bake 20-22 mins. Check with toothpick for doneness.
